Chia Seed Pudding
« on: December 13, 2019, 01:27:45 AM »

This turned out really good, texture of tapicoa, taste of vanilla ice cream.

1/2 cup chia seeds
1/2 cup heavy whipping cream
1-1/2 cups Silk coconut milk
2 tsp vanilla or to taste
2 tbs monkfruit sweetener or your favorite to taste

Stir all ingredients together and refrigerate 12 hours or overnight

can be topped with cinnamon, pumpkin pie spice or whatever you desire.  I like it plain vanilla.
2 net carbs, 1.5 grams protein, 8 grams fat, 100 calories per 1/2 cup serving

here's the recipe video:

Interesting, not much for tapicoa but this could be good.   :)

Looks great!

I've done chia seed puddings and like them!  You can also use them to make jams.
