
This turned out really good, texture of tapicoa, taste of vanilla ice cream.
1/2 cup chia seeds
1/2 cup heavy whipping cream
1-1/2 cups Silk coconut milk
2 tsp vanilla or to taste
2 tbs monkfruit sweetener or your favorite to taste
Stir all ingredients together and refrigerate 12 hours or overnight
can be topped with cinnamon, pumpkin pie spice or whatever you desire. I like it plain vanilla.
2 net carbs, 1.5 grams protein, 8 grams fat, 100 calories per 1/2 cup serving
