Making a Roux without grease?

Kevin Belton (PBS) made a roux without oil by baking the flour in an oven till golden brown instead of a pan with grease in it.

So that gave me an idea (DANGER Will Robin DANGER)!!!!!!!

So I'm going to bake some Alomond and reg flour in my Rec Tec this weekend and see what all I can make from it  ;)

Should be interesting to say the lease. :D :D :D :D

A roux made with almond flour will be interesting.  What's wrong with grease?  :P

I've seen this technique of browning flour on a sheet in the oven before, and it works well as a slurry (technically it's not a roux) for making & thickening darker sauces & gravies. 

I'll be interested in your experiment. So far I've not had good results using almond flour for thickening.  Your almond flour in the rec-tec idea might add some great flavor.
