Blueberry Butter Muffins

These are really good!

1Tbs butter
1 tsp baking powder
1 pack sweetener
1 egg
1/4 cup ground flaxseed
blueberries

I use a 1 cup measuring cup to prepare
Melt butter in microwave, stir in baking powder and sweetener, add egg and mix.  Add flaxseed and combine well.  Fold in blueberries and microwave on high for  75 seconds



341 calories
3 net carbs
11 g protein
26 g fat

Years ago I started making these based on a recipe from Atkins which called for 1/2 tsp.  There are other recipes which call for 1 tsp on the web.  I don't actually measure the baking powder, just scoop some out on a teaspoon.  I think it takes more due to using flaxseed.  I find that using more than the 1/2 tsp. makes it lighter and more airy.

My concern was the amount of sodium in a single muffin using 1 tsp of regular baking powder.  Depending on brand that would contain between  390mg - 590mg sodium in a single muffin.  ???


For doing recipes like this, I could see paying the price for low-sodium, or sodium-free baking powder, but yeesh is it pricey (about $11.50 for a container).

Next time I make one, probably tomorrow, I'll try just a 1/4th teaspoon of baking powder and post a picture so we can see the difference.  It will probably still be just fine.  That would be 130 mg sodium

This was with 1/4 tsp of baking powder.  Not much difference, just a little more dense.

It looks good with 1/4 tsp.  I suspect most of the leavening is coming from the egg anyways, with the baking powder giving a little more lift.

You can bet I'll be trying these soon!

2 slices of Kirkland bacon has 340mg salt.  A 2 oz serving of LOW sodium spam has 580mg.  1 oz of grated parm has 512 mg.  Lots of sodium lurking out there.  Going with 1/2 tsp of Clabber Girl baking powder is 260 mg sodium.

You are right, and I have to watch it on ALL of those items.  It all adds up!
