First try. I used almond flour, psyllium husk, oak fiber, in proportion to some other recipes I found. Then added a teaspoon of xanthan gum, salt and baking powder. I also used some active dry yeast, bloomed with a small amount of honey (no carbs remain after). I achieved the same weight of dry as KetoBakes package. I used the same amount of egg whites, water and vinegar as the packaged directions.
Compared to the KetoBakes product, these puffed up considerably more, but they also collapsed out of the oven.
I am NOT and baker, so don’t know what exactly what to adjust for different results. Perhaps one of you bakers here have a suggestion?
