Burger Buns
« on: November 03, 2020, 03:41:34 PM »
I think I’ve tried just about every Keto burger bun recipe I can find. I recently came across Keto Bakes

https://ketobakes.com/collections/all/products/best-ever-keto-sandwich-buns-mix

So gave it a try. After seeing the price and looking at the list of ingredients, I was prepared to give this a big thumbs down, but these are the best buns yet. Around $15 for 8 small buns though!  There are tons of recipes on line with very  similar ingredients. I have all the ingredients in the pantry. Would like to to figure out the recipe.

Maybe one of you more talented bakers can figure it out? Nothing exotic, but I was just amazed at how good these are.

To this just added egg whites, vinegar and water. The dough was VERY wet.

WOW 15 bucks??   They better be good

I'm sure someone if not me will try to make something close.  I have all the stuff to do it I believe so we will see

Thanks for the post we will try to get it done!!

One thing I have learned, when using almond flour or even coconut flour you need to let those sit a bit with moister so they fully incorporate the moister into the grain or it becomes grainy

First try. I used almond flour, psyllium husk, oak fiber, in proportion to some other recipes I found. Then added a teaspoon of xanthan gum, salt and baking powder. I also used some active dry yeast, bloomed with a small amount of honey (no carbs remain after). I achieved the same weight of dry as KetoBakes package.  I used the same amount of egg whites, water and vinegar as the packaged directions.
Compared to the KetoBakes product, these puffed up considerably more, but they also collapsed out of the oven.
I am NOT and baker, so don’t know what exactly what to adjust for different results. Perhaps one of you bakers here have a suggestion?

Hamburger Buns (KetoBakes copycat)
8 buns

185g Almond flour
30g Psyllium musk
25g Oat fiber
1 Tbs baking powder
1 tsp salt
1 tsp xanthan gum
1 pack active dry yeast
1 cup water
1 cup egg whites
1/4 cup vinegar
1 tsp honey or maple syrup (no carbs will remain)

Activate yeast in honey and a few Tbs of water
Mix all dry ingredients
After yeast proofs, 5 min or so, add egg whites, water and vinegar and mix
Add dry to wet, mix for a minute with beater.
Divide into 8 buns, on parchment lined pan
Bake at 350° for 55 min.
Cover with foil after 30 min to keep from getting too brown
Allow to cool completely.
