Beef / Low carb Enchiladas using Lavish Bread
« Last post by TMB on July 15, 2020, 03:54:47 PM »
So I got to wanting enchiladas and got to thinking that lavish bread is close to wraps so I gave it a try

I used 2 full sheets cut each in half which gave me 4 enchiladas, stuffed with taco meat and cheese

Here is the start to finish in pictures (there are a lot) Boy these were very good just like what you would get at a Mexican restaurant

I baked them for 15 mins on 350 temp then went back and added a little extra cheese for good measure

I remember as a kid I used to love Orange Dreamsicles, haven't seen them in awhile.  Vanilla ice cream covered with orange sherbet.  Great flavor combo.  I've been making a slushy version of this which has become a daily treat on these hot summer days. Super easy!!

1 packet of orange crush drink mix
1 Dollup of heavy whipping cream
1 dash vanilla  (optional)
ice
Fill smoothie cup with ice, add above ingredients and fill with water.  Blend until creamy.  Zero carbs!

Now on occasion... ;)...I may add a shot of tequila and make an Orange Dreamsicle Margerita, or a shot of vodka.  Still zero carb.   8)

In my experience I did incredibly better with weight loss back in the days before counting net carbs, as in the orginal Atkins diet from the 90's.  Hoping to get back into the low carb lifestyle after this weekend, need to take some weight off.  I'll be counting total carbs, not net.

Aargggg...I wrote that too soon. At the one hour mark I was unchanged, at the 2 hr mark, I spiked up to 180, so same problem as with the bread. I’ve been eating these for a number of years! 😕

I just did the same test with Mission Carb Balance Flour Tortilla. 19g total with 15g fiber. Good news, it had NO impact on my blood sugar.  I do Keto (Actually lazy Keto I guess) mainly for blood sugar control, not weight loss, so this is important. I don’t know the effect on Ketosis??
