Baking / Crustless Deep Dish Pizza
« on: February 26, 2019, 02:27:33 PM »
I love this recipe.

Recipe for the Deep Dish crustless pizza

Meat.. 1 to 1 1/2 lb of Italian sausage
1 1/2 cups of Mozzarella cheese (shredded)  Shred you own because store bought shredded cheese has more carbs
1 cup parmeasane cheese (half) for mix then the other to top with when done
Pure olive oil to pan fry

Coating for meat...

2.5 oz of plane pork rinds (ground up like bread crumbs)
1/4 cup flaxseed meal
1/2 cup parmeasane cheese (shredded)
1   tsp oregano
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper
1/2 tsp garlic powder
2   tsp paprika
1   large egg
1/4 cup olive oil

1 cup Rao's Tomato Sauce  (carb count of 8 total)
1/2 tsp garlic minced
1/2 tsp oregano
salt/pepper to taste

Form sausage into four patties, dip in egg/oil wash then coat with pork rind mix. After coating sausage place in fridge for a few hrs
to set coating

Pan fry in oil (pure olive oil, not virgin olive oil)  till crisp
drain on papper towel (drain as long as you can or it may turn out greasy)

Next, mix the sauce up

Place cooked sausage in 8x8 square plate, pour sauce over cooked sausage then add the mozzarella to top off.  Bake at 400 for 10 to 12 mins
or until top of cheese starts to brown. Remove top with the remaining parmeasane let stand a fe mins then

General Discussion / Re: Alcohol Opinions?

Thanks for the input all.  Sounds like if one is really serious about weight loss avoid all alcohols, at least until reaching the maintenance phase.   :-X
Just my 2 cents,

I don't drink but maybe a beer once in a blue moon and it does nothing as far as kicking me out BUT a beer or two is good for you if only now and then

Chicken / Low Carb Chicken Cordon Blue
« on: February 25, 2019, 08:28:20 PM »
Well had a few hunks of chicken laying in the fridge so I thought why not do Cordon Bleu  BUT, make a gravy for it!

So here is country style Cordon Bleu with butter gravy (low carb flour)  ;)

Pan seared the chicken on all sides to cook, then moved to the air fryer to finish

Gravy is Carb-Quick mixed with butter drippings from cooking the chicken and lots of pepper and salt with a little half and half mixed in.

The other day I had time to cold smoke some little smokies for about 35 mins then I grilled them on the SRG for a later date.......

Well that later date was last night.  Low carb  "Piglets" in almond flour/mozzarella mix   :)

Mix recipe is 1/2 cup mozzarella cheese (I shred my own)  1 cup almond flour, 1 tsp salt, two packets Pyure steava and 1 Tbs butter.

Roll the mix out till it thin but not to thin, cut into strips then roll the little smokies up til covered.      I used  my air fryer to cook them.  370 temp for 7 mins was perfect

Chicken / Fried Rice/Chicken well sorta
« on: February 25, 2019, 07:48:24 PM »
Had a BIG craving for fried rice but can't have it because of the carbs.   So I got to thinking why not use spaghetti squash cut up into small pieces like rice and stir fry them.

Well here is my version of Low Carb fried rice :)

I use 2 Tbs of soy sauce, soaked 1 Tbs dried onion then cut up squash into fine bits like rice.  Next I cut little chunks of chicken and stir fried them in sesame oil then add a few drops of soy sauce to flavor.  I removed the chicken pieces when they were done and added the squash/onion/soy mixture and stir fried it for a few mins.  Then I added the chicken back turned the heat to high and finished to a semi dry texture (kinda like rice a roni)
Really turned out well

Baking / Low Carb Thick Crust PIZZA
« on: February 25, 2019, 07:40:55 PM »
Got to thinking how good my puff pastry turned out and decided to try it as a pizza crust.   Turned out VERY good, I was impressed on the texture just wished I had a better baking pan

The recipe was simple.....

2 cup Alomnd flour
1/2 cup VWG
1/2 cup Poolish
1/2 cup warm water (110 temp)
1/8 tps dry yeast
1/2 tps salt

1 stick butter (to be used later for puff dough recipe)

Mix water and poolish together and let it sit 10 mins.
Mix all dry ingredents then add poolish/water to the mix stir and let it hydrate for 10 mins.

I let it sit for a few hours to rise then devide into two dough balls.  Each should make a 9 in pizza crust

To make the puff pastry, take one dough ball...
I took a stick of butter and graded it like cheese to make it work better when folding into the dough for puff dough
I added butter and folded dough rolled it out added butter and folded,  repeated this step 6 times to build layers

After I folded it I set it back in the fridge for an 1 hour to set before placing in baking dish

Cooked at 350 for 25 mins

« on: February 25, 2019, 05:48:58 PM »
Kimmie has been looking on line for new ideas as far as low carb and found this recipe.     It was a Philly Bake Nachos but we removed the chips to save on carbs.

Real recipe shows over 21 carbs per serving but with the chips removed it comes down to about 9 carbs per serving

Stir fry the Onion and peppers till tender then move aside, add beef and stir fry it done then move the veggies back on top of meat and add Italian seasoning and cook another 5 mins

Place mixture into a dish and top with cheese bake 375 for 15 mins or until golden brown
