Beef / Sunday roast beef

I was at Sam's club Saturday morning and ran across a beautiful roast just begging to be smoked then seared at 600+ temp on the SRG.

I trimed the roast then placed it in a gal size bag with 1 can beef broth, 1/4 can water and 2 tsp's garlic powder

Let it sit over night turning every few hours.  Removed and dried, rubbed with oil & added a little salt, pepper and just a little more garlic powder and a little rosemary. 

Placed in my homebuilt SRG pellet grill and smoked till IT of 135 was reached, then placed on another SRG that had been warming up to a temp of 600+.   

Once the roast has a good sear I placed in a pan with the brine I used to before (after I boiled it and strained it) plus one more can of beef broth so I could make Au Jus.

let it sit on top of the SRG grate for 45 mins then removed to slice up for sammies!

Was at WalMart and found this sauce thought I would give it a try.

It's not bad, not real sweet but not sour either so it's a good mix for those looking for lower carb sauce

I cooked these on the SRG with hickory pellets smoking away!!

Tailgating is my game said this about my low carb Deritos "Looks good Tommy now if you can do a low carb FRITOS...."

Well I gave it a shot just to see :)

Here is my first try, not bad but not real Fritos either.  BUT, for a crisp chip that can be used to dip cheese or even add to a taco salad they are perfect.

Taste is very close to those chips/fried noodles you use for soups from a chinese resturant

Here is another type of hotdog/sausage wrap

These were hot Conecuh sausage but hotdogs work just fine   You just need to make sure sausage is cooked through before you wrap to make sure they are cooked through 
 

1 cup almond flour
1 cup mozzarella cheese
2 tsp psyllium husk fiber
1/2 tsp xanthan gum
1/4 pack of yeast
1/3 warm water (activate yeast)
pinch salt
1/2 Tbs of whole wheat flour (use at second mix)

Mix all together but cheese. Form a dough ball let it rise 1 hr then melt cheese in a bow and combine the dough ball and cheese till you have another dough ball, then dust with wheat flour.  Let rise another hour then cut into strips and wrap hot dogs or precooked sausage.

Bake on a silicone sheet (non stick) at 350 for 15 mins or until golden brown

One thing I have learned, when using almond flour or even coconut flour you need to let those sit a bit with moister so they fully incorporate the moister into the grain or it becomes grainy

Made these from Lavish bread and powdered cheese

Lavish bread can be bought at Wal mart but the powder cheese I found at a local store but sure you can find it on the net

Anyway I cut the lavish bread to shape and lightly fried then drain oil and coated with powder cheese mix with onion powder, garlic powder and salt to taste 

Really close to Doritos

Kimmie has me painting bottles for her to make stuff

Found that a Lazy Susan works best for painting bottles.  Just spin it a little and paint works great!
RG started working with is better half on hobbies and they make some really nice stuff.

Welcome to the forum first off.   Your right about having folks give ideas and helping along as you go it does make a huge difference

When I started my eating plan I was just south of 300 and I could not tolerate anymore being that heavy
So I started the low carb way and dropped 50 lbs but since this COVID-19 crap I have put some back on now about to get back on track and looking forward to it in a big way

Hope others will join in and let’s get going together!
