Well,  I made it through Thanksgiving in one piece.......hahaha! I'm still losing.........I'm lighter than I've been in probably 10 years or more! 31lbs total,  not bad. 327lbs. my sights are set on 300lbs, then I'm pushing forward to 250lbs. Yes Sir! It's only a matter of time, I can feel it! :thumbup: :)

What do you use to thicken your sausage gravy?

Here's my wife's sausage gravy recipe........cream cheese is used to thicken the gravy. You can adjust the consistency with the heavy cream. Less for really thick, or more for a more liquidy gravy.

You may omit the instant coffee if you so choose. Give the recipe a shot, it's awesome!  :thumbup:

I wanted to share this recipe  for low carb almond flour biscuits. The biscuits are absolutely phenomenal! One of the best low carb replacement recipes I've came across yet!

My wife made them for Sunday morning breakfast, she added:

- 1/2 cup of fresh grated parmesan cheese
- 2 Tbsp of coconut flour
- 1 tsp dill
- 1 tsp garlic powder

I can't wait to try these biscuits with some of my homemade breakfast sausage made into some sausage and gravy next weekend!

Awesome recipe.........thanks for posting it. I'll be trying this one out!
I use pork rinds a lot for many different things like as a binder for meatballs and meatloaf instead of bread crumbs and it works really well.

30 lbs in two months, wow, congrats.  What is your goal?  We're here to help.

Thanks, I appreciate that. I'm losing around 2-3 lbs a week on average without much difficulty......(yet). Eating a low carb diet has really worked well for me so far. My starting weight was 358lbs at 6'4" (pretty heavy alright) at 54 years old. Now I'm right around 328lbs and dropping. My initial goal is 300lbs., then I'm pushing through to my final goal of 250lbs. I was 215 lbs when I was 20 years old and an Infantryman in the Army. So, I figure 250lbs is a decent compromise. I have a rather semi-physical job so that helps. At some point I'm going to have to increase my exercise to keep dropping the weight and I think a bycicle as well as added walking will fit that bill nicely.

I mentioned to Tommy that I was enjoying his low carb recipes in the letstalkbbq.com forum and he told me about this forum and invited me to join. This forum looks great! I've been eating a low carb diet for over two months now and I've lost 30 lbs.........so far. I've got a long row to hoe as my grandmother used to say but so far I'm loving the low carb lifestyle choice. The first week was rough,  I'll be honest with you but now I don't even miss the numerous things I thought I couldn't live without. Like  sugar in my coffee for example. Just heavy cream for me now. I'm excited about being here and look forward to participating!
