Low Carb Cooking Gallery / Orange Dreamsicle

I remember as a kid I used to love Orange Dreamsicles, haven't seen them in awhile.  Vanilla ice cream covered with orange sherbet.  Great flavor combo.  I've been making a slushy version of this which has become a daily treat on these hot summer days. Super easy!!

1 packet of orange crush drink mix
1 Dollup of heavy whipping cream
1 dash vanilla  (optional)
Fill smoothie cup with ice, add above ingredients and fill with water.  Blend until creamy.  Zero carbs!

Now on occasion... ;)...I may add a shot of tequila and make an Orange Dreamsicle Margerita, or a shot of vodka.  Still zero carb.   8)

I did the Atkins diet back in 2000 and lost 45 lbs in 10 months.  Back then I counted total carbs and limited them to 20 per day.  Nowadays with counting net carbs it seems like the weight loss is MUCH slower, I had been contributing that to being 20 years older, which I'm sure has a lot to do with it.  But recently I started counting total carbs again with a 20 per day limit and the weight loss has started again. 
What do y'all do and what has been your experience?

Found these at Costco, looked intersting.  I plan on trying them for wrapping a chicken fajita and also proscitutto.  Any other ideas?

Desserts / Chia Seed Pudding

This turned out really good, texture of tapicoa, taste of vanilla ice cream.

1/2 cup chia seeds
1/2 cup heavy whipping cream
1-1/2 cups Silk coconut milk
2 tsp vanilla or to taste
2 tbs monkfruit sweetener or your favorite to taste

Stir all ingredients together and refrigerate 12 hours or overnight

can be topped with cinnamon, pumpkin pie spice or whatever you desire.  I like it plain vanilla.
2 net carbs, 1.5 grams protein, 8 grams fat, 100 calories per 1/2 cup serving

Needed some hot chocolate for a cool night.  Had some coconut milk, cocoa and monk fruit.  Turned out great, hit the spot.

Celebrating my birthday today with a steak dinner.  Costco choice New York Strip with butternut squash, brussels, and goat cheese stuffed Peppadew peppers.  Life is good.  Managed to keep it low carb....AND DELICIOUS.

I miss morning cereal, this is a good substitute.  I used 2/3 cup of coconut milk, 2/3 cup of water and 2/3 cup of hemp hearts.  takes it awhile to thicken.

Picked up a pack of frozen salmon burgers at Costco, grilled one up, made a bun using recipe here:
I left out the sweetener and syrup and added more butter.  Made a decent bun for a burger.  Topped with onion, romaine, and maters.  Mayo and sriracha for condiments.

These are really good!

1Tbs butter
1 tsp baking powder
1 pack sweetener
1 egg
1/4 cup ground flaxseed

I use a 1 cup measuring cup to prepare
Melt butter in microwave, stir in baking powder and sweetener, add egg and mix.  Add flaxseed and combine well.  Fold in blueberries and microwave on high for  75 seconds

341 calories
3 net carbs
11 g protein
26 g fat

Did some chicken on the keg, marinated in a good fajita recipe, used a combo of the grill and a flat top.  Flipped back and forth from direct over the fire to getting a good sear on the flat top.

Had some blackend fish loins and shrimp fixed on the sideburner of the Weber.  Marinated the shrimp in a little red hot, sprinkled all with some rub and blackened in butter.

For these I use one bar of Bakers Chocolate 100% Cocao, 1/3 cup of coconut oil.  Heat in a 2 cup measuring cup for 1 minute in the microwave.  Remove and stir in 2 tbs peanut butter, I use Kirkland Natural, and 2 packs of sweetner.  Pour into the mini muffin molds and refrigerate.  After aroud 20 minutes place a pecan on top and keep in refrigerator.
I have one of these every morning with my morning coffee.
