Beef / Breaded steak on grill (Almond flour/ Parmesan breading)

I wanted to try my Alond Flour/ Parmesan mix on the grill instead of frying

So here is the cook...

I use cube steak and then add a little oil (if frying use egg)
I mix 50/50 almond flour and parmesan cheese add a little salt to taste and parsly.

I dip the steak in the oil then dredge the steak into the mix then set in the fridge for a few hours to set up

Set the SRG on med high temp setting and cleaned the grate. I then added some pellets for a little smoke flavor.

Normally the breading stays on well but this did not?  Not sure why and any suggestions are welcomed

Taste was wonderful though!

Pork / boneless pork chops with my almond flour/parmesan mix

Boneless chops in the air fryer using my almond flour/parmesan mix

Used air fryer set at 370 for about 10 mins then flipped went another 3 mins to crisp up

almond flour/parmesan mix  is 50/50 mix with a little salt and pepper and I added Garlick powder.  Used egg wash to retain flour to the chops

Chicken / Low Carb Chicken and Pig rub

Pig/Chicken rub

2 Tbs paprika
1 Tbs salt
1 Tbs pepper
1 tsp onion powder
1 tsp garlic powder
2 tsp stevia

Mix well and coat.  Bake 350 for 18 mins in a foil lined pan then flip cook another 2 or 3 mins and remove from oven, let rest covered with foil.  Going to try this on the smoker when it warms up

Now,  I'm told they can't get lupin flour only lupin meal and I don't think I can grind it down so Amazon seems the only way at this point >:( >:( >:(

How are you making your polish, using flour?
Yes, 2 Tbs with 1/2 tsp of yeast to start then feed it everyday with 1/2 Tbs of new flour.  I know it not rel low in carbs this way but the taste is very close to the real thing it's scary

Got to thinking how good my puff pastry turned out and decided to try it as a pizza crust.   Turned out VERY good, I was impressed on the texture just wished I had a better baking pan

The recipe was simple.....

2 cup Alomnd flour
1/2 cup VWG
1/2 cup Poolish 
1/2 cup warm water (110 temp)
1/8 tps dry yeast
1/2 tps salt

1 stick butter (to be used later for puff dough recipe)


Mix water and poolish together and let it sit 10 mins.
Mix all dry ingredents then add poolish/water to the mix stir and let it hydrate for 10 mins.   

I let it sit for a few hours to rise then devide into two dough balls.  Each should make a 9 in pizza crust

To make the puff pastry, take one dough ball...
 
I took a stick of butter and graded it like cheese to make it work better when folding into the dough for puff dough
I added butter and folded dough rolled it out added butter and folded,  repeated this step 6 times to build layers

After I folded it I set it back in the fridge for an 1 hour to set before placing in baking dish

Cooked at 350 for 25 mins

No I have a health food store that has it on order for me.    Price is .40 more per lb but incase I don't care for it I'm only out a few bucks  and no worries if they are damaged I wouldn't have to take them.  I seen where there were a few that were damaged and non-returnable
