Title: Beignet, is it possible low carb?

I'm sitting on the couch watching TV and I catch Kevin Belton on PBS making beignets so I have an IDEA!!!

Would it be possible to make them and do it low carb??   Well I'm going to try this weekend by using my puff pastry recipe I made a few months back.

I have ideas but not sure how it's gonna work but we'll see.

Sorry, been delayed on trying to make these.    Tis the season you know and Kimmie is getting ready for the Big day!  So am I  :D :D :D :D ???
