Desserts / Peanut & Almond butter Cookies

Had bad craving for penut butter cookies

Twist on there are they are low car no brown sugar an also made with Almond Butter

3 in cookie comes out to 7 net carbs so not bad at all and taste really good

Rescipe.....

1/2 cup almond flour
1/2 cup Carbalose flour
1 extra large egg
1/2 cup peanut butter
1/2 cup almond butter
1/2 erythitol sweetner
4 packs stevia

Mix well and should hand brown sugar out of the box consistancy.   Roll into balls and flaten down with a fork
just to where its flatter but not to thin. Bake at 350 for about 15 mins and let cool

Low Car Cheese (hushpuppies) LOL

Found a recipe on line for cheese balls but were WAY to high in carbs, so I decided to make them my way to see if they would work.

Recipe...

4 oz  Cheddar Cheese
4 oz  Mozzarella Cheese
2 ex-large Eggs
1 cup Carb Quick Mix (Wal-Mart) carries and Amazon
3/4 cup Low carb Flour (Amazone)
Salt to taste
Half and Half 2 Tbp or enough to make the dough like playdough

Deep fry at 325 till golden brown and let drian on paper towel.

Texture was dang near perfect and taste was good (although Kimmie had to tell me becouse I still have 0 taste buds from covid

Wanted to make my version of low carb "Stove Top Stuffing"

I used low carb bread from Aldi's amd mixed what I felt like it would take to make it. 

2 cups bread (cut into cubes and dried)
1/4 tsp Sage
1/4 tsp Parsley
1/2 cup water
3 Tbs butter (real butter)
1/2 tsp Garlic (from jar cut up bits)
1/2 tsp chicken powder
pinch of salt   

Bring all but bread to a nice simmer and mix well then add bread and stir, then cover for about 5 mins then fluff with fork and serve

Beef / Chick-Fil-A burgers?

A few years back I started to use pickle juice as a brine for chicken just like Chick-fil-A does and it works great.
As close to Thiers as I can get without using the breading.

So Saturday it hit me I have a chance to brine hamburger in pickle and see how it goes.

Well I took two patties and a little pickle juice let them soak for 12 hrs and wow it was good!  If you like pickles on your burger you will love this!

Beef / Beef and gravy

Take a Chuck roast slice real thin and remove as fat as you can.
Add 3 oz of real butter into a pan and turn on heat to med high
next brown meat and then remove meat to a bowl. Next toss a small white
onion into the butter and cook down for 15 to 20 mins. When the onions are
cooked add 10 oz beef broth and salt and pepper to taste. Next add the meat back
to the pan and let it simmer for 30 mins.  After the meat has simmered add 3 Tbs
Low Carb flour (Amazon has it) to about 1/2 cup water and mix well then add to the
pan and stir till it thickens add a topp and let simmer for a min of 1 hr I go
2 hrs because I like the meat very tender.

Bread used was no carb bread from Aldi's good stuff!

Chicken / Another try at a Chick-fil-A

Another try at Chick-fil-A copy

Used ground chicken for starters.  Would not require the long
brining time for the pickle juice

Recipe...

1 lb   Ground chicken
3 Tbs pickle juice
3/4    Carb Quick flour (as a binder)
1      EGG
S&P    to taste

Mix well and put in freezer for awhile (helps set up for forming)

Coating

2 cups Parmesean cheese
2 cups Low car bread ground into bread crumbs
2 Tbs Parsley
S&P to taste

Pat out into patties and coat with mix and out back in fridge for 30 mins
this helps the coating stay on

Pan fry till golden brown.

Seafood / Coconut Shrimp with sweet sauce low carb

Coconut shrimp and sweet tangy sauce

Kimmie found this awhile back on a low carb cooking site.

Recipe....

25 to 35 large shrimp
1 1/2 cups unsweeten coconut flakes
4     eeg whites
1 1/2 cups of coconuut flour


Sauce....

1/2 cup unsweeten apercot jelly or jam
1/2 tsp red pepper flakes
1 1/2   Tbs of lemon juice
1 1/2  red wine vinager
1     packet of Stevia

1st Coat shrimp with coconut flour
2nd Coat shrimp with egg wash
3rd Coat shrimp in coconut flake
4th Bake at 400 for 15 min's and flip.  You want the cocnut
to brown and crisp up on both sides.

So while the shrimp is in the oven mix up the sauce for either dipping
or you can coat the cooked shrimp like in the picture

A few weeks ago my mother in-law bought an old curio cabinet and asked if I could restore it.

I like a challenge so I said sure I would do it BUT it will take some time to finish

Life has been crazy around here but I finally got my LUPIN flour to make stuff with !

Beef / Breaded steak on grill (Almond flour/ Parmesan breading)

I wanted to try my Alond Flour/ Parmesan mix on the grill instead of frying

So here is the cook...

I use cube steak and then add a little oil (if frying use egg)
I mix 50/50 almond flour and parmesan cheese add a little salt to taste and parsly.

I dip the steak in the oil then dredge the steak into the mix then set in the fridge for a few hours to set up

Set the SRG on med high temp setting and cleaned the grate. I then added some pellets for a little smoke flavor.

Normally the breading stays on well but this did not?  Not sure why and any suggestions are welcomed

Taste was wonderful though!

Pork / boneless pork chops with my almond flour/parmesan mix

Boneless chops in the air fryer using my almond flour/parmesan mix

Used air fryer set at 370 for about 10 mins then flipped went another 3 mins to crisp up

almond flour/parmesan mix  is 50/50 mix with a little salt and pepper and I added Garlick powder.  Used egg wash to retain flour to the chops
